Most know them as crepes but I know them as Palačinky (they're basically the same thing but I like to think the French stole this recipe from the Slovaks)
At any rate, my Dad grew up eating palačinky on Fridays during Lent. He loved them so much that in his 8th Grade Yearbook he listed this dish as his favorite food. I can only imagine what his classmates thought- being mostly Irish and Italian. But I'm glad to carry on this tradition of making palačinky and I hope you make them tonight for happy hour or dinner. Make extras and you can have them for breakfast too!
Palačinky are a really versatile food- you can fill them with jelly, syrup, peanut butter and the list goes on. Today I'm using lekvar also known as prune butter. Lekvar is common in Hungarian and Slovak dishes so I wanted to make this recipe as hunky and authentic as possible!!
Ingredients: Makes about 6
All Purpose Flour--- 1 CUP
Milk--- 1 CUP
Egg--- 1 (Large)
Sugar--- 1.5 TBSP
Salt--- Pinch
Vanilla Extract--- 1/2 TSP
Butter--- About 2 TBSP
STEP BY STEP:
- 1. Set stove-top burner to Medium-Low
- 2. In a bowl, mix flour, sugar and salt
- 3. In a separate bowl, wish egg and mix in milk and vanilla extract
- 4. Pour wet ingredients into the dry ingredients and stir until smooth. (Should be a runny consistency a little thicker than milk
- 5. Butter pan (should be warm enough to melt the butter but not burn it)
- 6. Pour about 1/4 Cup of batter into the pan and spread around the surface until you have a flat pancake
- 7. Let cook on either side for about 30 seconds or until you have a nice light brown color.
- Don't forget to flip it!
