Make Your Own Corn Tortillas

With restaurants like Chipotle, Cal-Tort and Qudoba popping up seemingly everywhere, tortillas are becoming even more popular nowadays. The Tex-Mex section in grocery stores seems to be growing and growing each time I walk down the aisle. But I'm a strong believer in making things from scratch so I did my homework and researched how to make homemade tortillas.

As it turns out they are really simple to make and only call for two ingredients- Corn flower and water. However, to make a nice even, flat tortilla I'd strongly recommend investing in a tortilla press.(And by investment I mean the $15 model on Amazon!!)  I bought the 6" press and make them on the smaller side-- I like to eat them like mini soft-shell tacos.

I've found that Maseca corn flour is the best and most authentic for making tortillas. A 4lb bag of this flour can be purchased for a little under $5.

This recipe is just a quick explanation of the tortilla making process. Feel free to stuff them with whatever your heart desires!!

Ingredients: *Makes 6 small tortillas*
Corn Flour--- 1/2 CUP
Water---  1/3 CUP
Onion Powder--- 1 TSP
Garlic Power--- 1/2 TSP
Salt and Pepper--- To Taste

STEP BY STEP:

  • 1. In a bowl, mix corn flour, onion powder, garlic powder, salt and pepper

  • 2. Stir in enough water that the dry ingredients form a solid dough ball.

  • 3. Separate dough into 6 even sized balls and roll in between your palms

  • 4. Place pan on  burner and set to Medium-High

  • 5. Line tortilla press with a folded sheet of plastic wrap

  • 6. Place a dough ball in between the plastic sheets and center it in the press

  • 7. Using the top of the press, firmly push down

  • 8. Open the press and carefully unwrap the tortilla

  • 9. Place tortilla on pan (It's important not to add oil, unless you want to make a tostada. But I promise the tortilla won't stick)

  • 10. Let cook on each side for 30 seconds to a minute, depending on how dark you want it. Edges of the tortilla start to rise once they are ready.

  • 11. Keep tortillas covered until serving. The humidity makes them more bendable and they stay warmer longer.

  • 12. Stuff with meat, veggies, fish or even a black bean burger!! And as they say in Mexico-- Buen provecho!!!
