Roasted Pepper & Garlic Hummus






With the Super Bowl only days away I really wanted to post some recipes that are not only easy but quick because I know you want to enjoy the game rather than be in the kitchen all day.

Aside from the big game this Hummus recipe is really easy to make and it's a perfect side for really any occasion. Homemade hummus is great if you're a college student with a small food budget all you really need is chickpeas, tahini, and a food processor (or blender).



You can get really creative with your hummus whether you want to add sriracha or olives or even fruit and nuts. It also stores well so you can make this a few days before the big game!!

Ingredients:

Chickpeas (Garbanzo Beans)--- 1 16oz Can
Tahini (ground sesame seed paste)--- 1/3 CUP
Garlic--- 1 Clove
Sweet Pepper--- 1 (small)
Olive oil--- 1 TBSP
Lemon Juice--- 2 TSP
Water--- 1/4 CUPS
Salt and Pepper--- To taste
Paprika--- 1 to 2 TSPs

STEP BY STEP:

  • 1. Preheat oven to 400F

  • 2. Mince garlic and sweet pepper (this helps with the blending)

  • 3. In an oven-safe bowl, toss garlic and pepper in olive oil and roast in oven for 10 minutes

  • 4. After time has passed, add garlic and pepper to food processor

  • 5. Wash chickpeas and be sure to remove skin of the beans, strain out any extra water

  • 6. Add chickpeas to food processor and pulse until it forms a blended mash (it may still be a little chunky at this point)

  • 7. Add tahini and pulse into a smooth paste  
    • At this point, you may need to use a rubber spatula to scrape any hummus that is sticking to the sides. 

  • 8. Add olive oil, lemon juice, salt and pepper and pulse until blended. 

  • 9. Slowly add water while pulsing to give your hummus a more airy and creamy texture.

  • 10. Once you found your desired thickness, move to a dish and garnish with olive oil, paprika, and sriracha (if you like spicy!)

Serve with crackers, pretzels, veggies or really any snack you like to eat on your game-days!!
