Ok, so I know some of these Lenten Friday meals can seem basic but this dish was a surprise! Frying the plantains released some sweetness and the salt only enhanced the flavors. The beans added substance to a well rounded, and great tasting dinner. And according to the Rice Bowl's website, each serving is under $3- which is something that we all can get behind!

Ingredients: Serves 2
Plantains--- 2
Can of Beans--- 1 Can
Tomato (chopped)--- 1
Onion (chopped)--- 1 CUP
Pepper (chopped)--- 1 CUP
Garlic (minced)--- 2 Cloves
Chili Powder--- 2 TSP
Paprika--- 1 TBSP
Salt and Pepper--- To taste
Olive Oil--- 2 TBSP
STEP BY STEP:
- Slice plantains into 1/4" thin strips and season with Salt
- Heat large frying pan to Medium and add oil once hot. Fry plantains so they turn from a pale yellow to a golden yellow.
- Remove plantains and let rest on a paper towel. This will absorb excess oil.
- Cut onion, pepper, garlic and add to pan.. Strain beans and add to pan as well. Stir to evenly mix.
- Add tomato to bean mix and season with chili powder and paprika.
Serve beans once onions and peppers are warm and tender. Enjoy!
